Is there a safe way to change the name of a global var?

Can I safely change the name of a global var in the Equation Manager simply by editing the name in the first column? Will Solidworks cascade the update to all the instances of the old name in all the equations where the global var is used?

What I'd like to do is change simply edit "OldVarName" to "NewVarName" once and have all the equations updated automatically. Is that how it is supposed to happen?

Or, will I have to change all the equations referencing OldVarName manually - one at a time?

Yes, you can...
Just edit "OldVarName" to "NewVarName", re-enter the value, then all the equations will update automatically.
